Of course, if you’re going to make maple walnut ice cream – I’ll assume you like walnuts!
But if you’re not a walnut lover, just leave out the walnuts and you’ll have made a delicious maple ice cream – sometimes called maple syrup ice cream! That is equally delightful!
For this recipe, you’re going to need chopped walnuts.
Naturally, the easiest way to add them is to buy pre-chopped walnuts.
If you find yourself with whole walnuts or a bag of walnut halves, no problem.
You won’t want to use large walnut halves in your ice cream. It would be much to big a chunk to come across in your ice cream and the large chunks could damage some ice cream makers.
You’ll want to chop them.
Chopping Walnuts
Simply place your walnut pieces in a food processor and pulse until the walnuts are chopped to the desired size.
If you don’t have a food processor, here’s another easy way to chop walnut pieces.
Place the walnut pieces in a ziploc bag, push the air out, and seal. Then, place this bag on a cutting board and pound with a rolling pin.
Now you have your chopped nuts contained nicely in a bag, ready to add to your ice cream base.
This easy homemade ice cream recipe calls for pure maple syrup – but it works fine with artificial maple syrup too!

If you’ve never had to regularly select a mango at the store, let me give you some tips on how to find the best one.
Appearance
First, I know I’m always attracted to “pretty things,” but when it comes to mangoes – don’t worry about the color. Color doesn’t matter. More or less red does not indicate ripeness.
Touch
The best indicator of ripeness is to feel the mango. The mango should be somewhat firm (not mushy), but have some give to it when you gently squeeze it.
Smell
If you smell the mango at the top, where the stem would have been, you can often smell that mango smell.
Naturally, this ice cream is a pale orange in color.
Do you want a more intense mango color?
Simply add some food coloring to the ice cream until you achieve the color that you’re looking for.
Adding more mango would dilute the ice cream and it would turn out too icy and not creamy enough.
Enjoy this ice cream garnished with a slice of lime.

Scoop French Vanilla ice cream into bowls.
Top vanilla ice cream with whipped marshmallow, hot fudge, and peanut butter.
Add whipped cream on top.

Ice Cream Maker Time: Approximately 25-30 minutes
Makes: 1 quart
Servings: Eight servings
Ingredients:
3/4 cup sugar
3 tablespoons cornstarch
1/8 teaspoon salt
4 cups fat free half-and-half
2 egg yolks, beaten
3 teaspoons vanilla extract
Directions:
Make ice cream without an ice cream maker.
In a large saucepan, combine sugar, cornstarch and salt. Gradually add half-and-half, stirring constantly. Boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from heat and cool slightly.
Whisk a small amount of hot mixture into egg yolks. Return mixture to saucepan, whisking constantly. Cook and stir over medium heat for 2-3 minutes or until mixture reaches 160°.
Remove from heat. Stir in vanilla. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Transfer to a bowl. Press plastic wrap onto surface of mixture. Refrigerate for several hours or overnight.
Fill ice cream maker two-thirds full; freeze according to manufacturer’s directions. Refrigerate remaining mixture until ready to freeze. Allow to freeze for 2-4 hours before serving.

1 cup half and half (or milk)
2 eggs (optional)
3/4 cup low-carb sugar substitute (your favorite)
2 tsp vanilla extract
Directions:
In a bowl, mix all ingredients together well until they are thoroughly combined.
Place in your ice cream maker and churn for about 25-30 minutes or accoding to manufacturer’s instructions.
Variations:
Low Carb Chocolate Ice Cream Recipe: add 2 tbsp cocoa
Low Carb Fruit Ice Cream Recipe: add 1 cup fresh chopped/sliced fruit – your choice (strawberries, raspberries, or blueberries), also add an additional 1/4 cup low-carb sugar substitute.
1 1/2 cups whipping cream
1 tbsp liquid Stevia
1 tsp vanilla extract
2 tbsp sugar free instant vanilla pudding mix
1 cup clear diet soda – cream soda is the best!
In a 1 quart or larger blender, combine cream, sweetener, vanilla and pudding mix.
Beat at high speed on blender until volume reaches 2 1/2 cups.
Stir in enough clear soda to make volume reach 4 cups.
Pour into ice cream maker and churn for about 25-30 minutes or according to manufacturer’s instructions.
This low carb ice cream recipe is yummy and creamy with no bitter aftertaste. You cannot tell it is sugar free.
It does freeze very hard though, after you put it in your freezer. So if you don’t eat it all after you make it, you will need to let it soften a bit before eating it.
Yields 8 servings

1 tbsp liquid Stevia
1 tsp Vanilla extract
4 tbsp unsweetened cocoa

What You’ll Need
How to Play
Start out by reading the book “Good Night Moon” or another short story about space.
Then, talk about how the earth and other planets are round…like balls scoops of ice cream.
Give each person one scoops of vanilla ice cream in a paper bowl and instruct them to make a planet using the toppings provided.
Marshmallow creme for clouds, blue sprinkles for water, green sprinkles for land, candy bits for craters, etc.
Each child is a winner, because they get to eat their creation, they get to eat their planet.
Variation
For the adult’s version of Lost in Space, give each person two scoops of his favorite flavor of ice cream in an ice cream fountain dish.
Each person must fill the fountain cup and ice cream with the most toppings.
If a person causes his dish to overflow or make a mess, he automatically loses!
The adult winner is the first person who fills his cup with so many toppings, that their is no clear space in their glass.
…that is why this game is called Lost in Space.
