Low Carb Ice Cream Recipe

Looking for a low carb ice cream recipe that is yummy on your lips, but not forever on your hips?

How do you make a low carb – but still delicious – ice cream? Especially if you’re on keto!

Below we’ll help you by sharing some fantastic low carb ice cream recipes that can be made in a regular ice cream maker and are simple and delicious!

The trick is maintaining the flavor without the calories and carbs of sugar. That’s where some alternative sweeteners come in and save the ice cream day!

For many of us a low-carb lifestyle is here to stay, and to sustain that way of life, we need to eat healthy foods that we can enjoy on a regular basis. But sometimes that sweet tooth just demands something more! Check out our healthy ice cream recipe below.

Easiest Homemade Ice Cream

Here’s a basic, easy ice cream recipe for you to follow. Below we’ve included several different variations of this recipe so that you can make all sorts of different flavors.

Ingredients

1 cup heavy cream
1 cup half and half (or milk)
2 eggs (optional)
3/4 cup low-carb sugar substitute (your favorite)
2 tsp vanilla extract

Directions:

In a bowl, mix all ingredients together well until they are thoroughly combined.

Place in your ice cream maker and churn for about 25-30 minutes or accoding to manufacturer’s instructions.

Variations:

Low Carb Chocolate Ice Cream Recipe: add 2 tbsp cocoa

Low Carb Fruit Ice Cream Recipe: add 1 cup fresh chopped/sliced fruit – your choice (strawberries, raspberries, or blueberries), also add an additional 1/4 cup low-carb sugar substitute.

Basic Vanilla Low Carb Ice Cream Recipe

1 1/2 cups whipping cream
1 tbsp liquid Stevia
1 tsp vanilla extract
2 tbsp sugar free instant vanilla pudding mix
1 cup clear diet soda – cream soda is the best!

In a 1 quart or larger blender, combine cream, sweetener, vanilla and pudding mix.

Beat at high speed on blender until volume reaches 2 1/2 cups.

Stir in enough clear soda to make volume reach 4 cups.

Pour into ice cream maker and churn for about 25-30 minutes or according to manufacturer’s instructions.

This low carb ice cream recipe is yummy and creamy with no bitter aftertaste. You cannot tell it is sugar free.

It does freeze very hard though, after you put it in your freezer. So if you don’t eat it all after you make it, you will need to let it soften a bit before eating it.

Yields 8 servings

Basic Chocolate Low Carb Ice Cream Recipe

1 1/2 cups whipping cream
1 tbsp liquid Stevia
1 tsp Vanilla extract
4 tbsp unsweetened cocoa
1 cup clear diet soda

Combine whipping cream, Stevia, vanilla, and cocoa in a blender (1 quart or larger).

Blend at high speed until volume reaches 2 1/2 cups.

Stir in enough soda to make volume reach 4 cups.

Pour this mixture into your ice cream machine and follow manufacturer’s directions – about 25-30 minutes.

Please note, this ice cream freezes hard – so you will need to let it soften a bit before eating it.

You may add chopped nuts if desired – adjust your carb count and enjoy!

Total Carb Grams 21

Basic Coffee Low Carb Ice Cream Recipe

1 1/2 cups whipping cream
1 T. liquid Stevia
2 T. sugar free instant vanilla pudding
2 T. instant coffee granules
1 cup clear diet soda

In a 1 quart or larger blender, combine whipping cream, liquid Stevia, vanilla pudding mix, and coffee granules.

Beat in blender on high speed until volume reaches 2 1/2 cups.

Stir in enough clear soda so that the volume reaches 4 cups.

Pour into ice cream maker and churn for about 25-30 minutes or according to manufacturer’s instructions.

It’s delicious – but it will freeze a little hard – so you might have to thaw it a little to soften it before eating it.
