This strawberry ice cream recipe is just what you need for those hot summer days. This fresh tasting homemade ice cream is easy to make.

Strawberry Ice Cream Recipe

Strawberry is one of the most popular flavors of ice cream and now you can make it right in your home.

When it is made with real strawberries, it tastes so fresh.

How to Add Strawberry

For this recipe, we use fresh strawberries (or frozen is fine too).

You can add the strawberries in two different ways.

Chunks of Fresh Strawberry

If you like strawberry chunks in your ice cream, just slice up some fresh strawberries and add them when the recipe directs.

When you are slicing the strawberries, it is better to slice or chop the strawberries in smaller pieces. After the strawberries have fully frozen the have a tendency to become hard.

Smaller strawberry pieces will prevent a large icy lump in your ice cream.

Smoother Strawberry Texture

If you like the strawberry taste without the chunks, just puree fresh strawberries and add them when the recipe calls for the strawberry juice.

Whatever you choose, this fresh tasting strawberry ice cream is sure to hit the spot!

How to Make Ice Cream With a Deep Strawberry Color

The strawberry juice added to this ice cream produces a soft strawberry color.

If you’d like a more “intense” strawberry color, simply add a few drops of red food coloring until you achieve the color you desire.

Add the food coloring to the ice cream base before you churn it in the ice cream maker.

Adding more strawberry juice to create a more intense color will produce a more icy ice cream.

This is because the strawberry juice is not as concentrated as the food coloring so you will have to add more juice than you would food coloring.

Ice cream is in part smooth because of the high fat content. Adding large amounts of watery strawberry juice to the ice cream base will dilute the fat content of the milk and whipping cream and the result is a harder, more icy ice cream. It will still taste good, but the texture will be off.

Ingredients
  

Strawberries

  • 1 pint strawberries 16 oz
  • 3 tbsp lemon juice
  • 1/3 cup sugar

Ice Cream Base

  • 1 cup milk
  • 2/3 cup sugar
  • 2 cups heavy cream
  • 1 tsp vanilla extract

Instructions
 

  • If you don’t have an ice cream maker, click here.

Strawberries

  • Wash, stem, and slice strawberries.
  • Combine strawberries, lemon juice, and 1/3 cup sugar in a small airtight container.
  • Place strawberry mixture in the fridge for at least 2 hours. Leaving the strawberries, in the fridge longer will enhance the flavor.

Ice Cream Base

  • Mix milk and sugar, allowing the sugar to dissolve (mix about 1 -2 minutes with a hand mixer or whisk).
  • Drain strawberries, adding juice to milk mixture. Set strawberries aside.
  • Stir in heavy cream and vanilla.
  • Pour mixture into your ice cream maker. Mix about 20-25 minutes.
  • Add about half the strawberries to ice cream mixture (use the other half as a fresh berry topping!).
  • Mix 5 minutes more in your ice cream maker.

  • 2 eggs
  • 1 cup milk
  • 2/3 cup sugar
  • 2 cups heavy cream

Strawberries

  • Clean, remove stems, and slice strawberries.
  • Toss strawberries with lemon juice, and 1/3 cup sugar in a small airtight container.
  • Allow strawberry mixture to chill in the fridge for at least 2 hours. Leaving the strawberries, in the fridge longer will enhance the flavor.

Ice Cream Base

  • Beat eggs with sugar until a smooth pale yellow color appears.
  • Heat milk until bubbles start to form, but do not boil.
  • Pour about half the milk over the egg mixture and stir well.
  • Mix the remaining heated milk into the eggs and return to saucepan.
  • Continue to heat the milk over medium heat until milk thickens and begins to stick to the back of your spoon.
  • Remove from heat and chill completely in fridge. This will take at least 3 hours - overnight, but the more thoroughly chilled the smoother the ice cream.
  • Drain strawberries. Add the strawberry juice to milk mixture and set the strawberries aside.
  • Add heavy cream and vanilla and stir.
  • Pour mixture into your ice cream maker.
  • Mix about 20-25 minutes.
  • Add about half the strawberries to ice cream mixture (use the other half as a fresh berry topping).
  • Mix 5 minutes more in your ice cream maker.
