Tutti frutti ice cream flavor – what’s that? It’s a delicious goat milk ice cream base with cherries and pineapples mixed in to produce a delightfully fresh flavor.

Making a Pink Ice Cream

For a nice pink color, and more flavor, substitute the cherry juice for some of the milk.

This will, however, result in a slightly harder ice cream because you are substituting a watery substance (cherry juice) for a more fatty liquid (milk). One of the reasons that ice cream is smooth and creamy is because of the fat content in the milk.

If you would like to have the pink color (but not the extra cherry flavor) without sacrificing the texture of the ice cream, simply add a bit of food coloring instead.

Chill the Fruit

This recipe calls for a jar of maraschino cherries and a can of crushed pineapples.

It’s a good idea to chill the fruit before adding it to the ice cream.

The fruit is added during the last 5 minutes of churning when the ice cream is mostly hardened.

If you add fruit at room temperature, the fruit will warm up the ice cream and the ice cream will not freeze as fast.

One of the keys to a smooth and creamy ice cream is freezing time.

The faster the ice cream freezes, the better the texture of your ice cream.

So help the process by chilling the fruit before adding it to your ice cream.

Ingredients
  

  • 2 quarts goat milk
  • 1 can evaporated goat milk
  • 2¼ cup sugar
  • ½ tsp salt
  • 2 tbsp vanilla extract
  • 1 can crushed pineapple (20 oz.), drained
  • 1 jar maraschino cherries (10 oz.), cut in quarters

Instructions
 

  • If you don't have an ice cream maker, click here.
  • Mix the sugar and salt into the goats milk, stirring until sugar is completely dissolved.
  • Stir in the evaporated goat milk and vanilla extract, mixing thoroughly.
  • Pour this mixture into your ice cream maker.
  • Freeze according to your ice cream maker’s directions.
  • Add crushed pineapple and maraschino cherries during the last 5 minutes of churning.
  • Helpful Hint: For a nice pink color and more flavor, substitute the cherry juice for some of the milk – this will make take away some of the smoothness of the ice cream texture, however.

Ingredients
  

  • 2 quarts goat milk (8 cups)
  • 1 can evaporated goat milk
  • ¼ cup flour
  • 2¼ cup sugar
  • ½ tsp salt
  • 4 eggs
  • 2 tbsp vanilla extract
  • 1 can crushed pineapple (20 oz.), drained
  • 1 jar maraschino cherries (10 oz.), cut in quarters

Instructions
 

  • If you don't have an ice cream maker, click here.
  • Mix the sugar, salt and flour in a saucepan, and add 1 quart of milk while stirring.
  • Heat this mixture on medium while continuing to stir until thickened.
  • In a bowl, whisk the eggs well.
  • Temper the eggs by adding a cup of the hot mixture to the eggs slowly while stirring.
  • Add the eggs to the saucepan, and cook for one minute, stirring constantly.
  • Chill the mixture in the refrigerator for about 12 hours.
  • In a large bowl or pot, combine the remaining quart of goat milk, the evaporated milk, vanilla extract and the chilled custard, and mix thoroughly.
  • Pour into your freezer canister.
  • Freeze according to your ice cream maker’s directions.
  • During the last 5 minutes of churning, add the pineapple and cherries.
