A Chocolate Chip Cookie Ice Cream Sandwich is one of my favorite treats!

It’s simple to make – but it’s a fun and unique way to serve ice cream.

This ice cream dessert is so easy to make, that your kids can also take part in making it!

Easy Ice Cream Sandwich

Cookie Dough Ice Cream

What You’ll Need

The ingredients are simple.

All you need are

  • Chocolate Chip Cookies: store-bought or homemade
  • Vanilla Ice Cream: store-bought or homemade

Optional Items for Decoration

  • Sprinkles, Mini M&Ms, Chocolate Chips, Raisins, Chopped Nuts, etc.

Tips For Assembly

Prepare the Cookies

Freeze cookies before making spreading ice cream on them to prevent the ice cream from melting.

Prepare the Ice Cream

Allow the vanilla ice cream to sit out for several minutes at room temperature or until the ice cream begins to soften around the edges. Do not let the ice cream get too soft, because it will continue to soften as you assemble the sandwiches!

Use ice cream along the sides of the ice cream container first rather than scooping from the middle. The ice cream along the sides of the container will soften and melt first.

Use the Right Amount

Spread about a 1/2 – 1 inch layer of ice cream on top of a chocolate chip cookie all the way to the edges.

How to Spread

It may be helpful to mound a little extra ice cream in the center of the cookie, because it will spread to the edges when you place another cookie on top.

Placing the Top Cookie

Place another cookie on top of the ice cream. Be sure to align the cookies so that your ice cream sandwich is not crooked!

Carefully push the chocolate chip cookies together so that the cookies are secure and the ice cream is evenly distributed between the two cookies.

Ice Cream Sandwich Recipe

Keep it Neat

To remove any excess ice cream, run a dull knife along the edge of the cookies and ice cream. Add more ice cream where needed.

Keep it Frozen

Place your chocolate chip cookie ice cream sandwich immediately into the freezer before beginning to make the next sandwich.

If you’re making a large number of ice cream sandwiches, the ice cream in your container may become too soft. If this happens, take a break. Place ice cream back into the freezer. When the ice cream has firmed up a bit, resume making your dessert.

Decorating

After assembling your cookie sandwiches, allow the ice cream to harden for at least several minutes in the freezer. Decorate the ice cream middle by placing some goodies along the edge of the ice cream: sprinkles, mini M&Ms, small gum drops, chocolate chips, raisins, chopped nuts, etc. Place each sandwich back into the freezer after decorating the ice cream.
