Mango Ice Cream Recipe

Mango ice cream is a delicious summer treat. It’s fresh taste is refreshing on a hot day – but if you need a “pick-me-up” ice cream recipe in the winter, you can try this then too!

I’d been wanting to try this ice cream recipe for quite some time – then one day I happened to see the mangos on sale and I couldn’t resist any longer. The result? This delicious recipe.

How to Choose a Mango in the Store

If you’ve never had to regularly select a mango at the store, let me give you some tips on how to find the best one.

Appearance

First, I know I’m always attracted to “pretty things,” but when it comes to mangoes – don’t worry about the color. Color doesn’t matter. More or less red does not indicate ripeness.

Touch

The best indicator of ripeness is to feel the mango. The mango should be somewhat firm (not mushy), but have some give to it when you gently squeeze it.

Smell

If you smell the mango at the top, where the stem would have been, you can often smell that mango smell.

Intensifying the Color

Naturally, this ice cream is a pale orange in color.

Do you want a more intense mango color?

Simply add some food coloring to the ice cream until you achieve the color that you’re looking for.

Adding more mango would dilute the ice cream and it would turn out too icy and not creamy enough.

Ingredients
  

Mango

  • 1-2 mangoes to make 1 - 1½ cups of mango puree
  • 1/4 cup sugar

Ice Cream Base

  • 3/4 cup milk
  • 2/3 cup sugar
  • 2 cups heavy cream
  • 1 tsp vanilla

Instructions
 

  • If you don’t have an ice cream maker, click here.

Mango

  • Puree mango.
  • Combine mango and 1/4 cup sugar in a small, airtight container.
  • Chill mango mixture in the fridge for at least 1 hour. It’s best to let it sit in the fridge for 12-24 hours – this will enhance the flavor – do whatever you have time for.

Ice Cream Base

  • Mix milk and sugar together so that the sugar dissolves (this will take about 1 -2 minutes with a hand mixer or whisk).
  • Add about 1 to 1 1/2 cups of puree to the milk mixture, stirring well.
  • Stir in cream and vanilla extract.
  • Pour into ice cream maker.
  • Mix about 25-30 minutes or according to manufacturer’s instructions.
  • Eat and be refreshed!

Ingredients
  

Mango

  • 1-2 mangoes to make 1 - 1½ cups of mango puree
  • 1/4 cup sugar

Ice Cream Base

  • 2 eggs
  • 3/4 cup sugar
  • 3/4 cup milk
  • 2 cups heavy cream
  • 1 tsp vanilla

Instructions
 

  • If you don’t have an ice cream maker, click here.

Mango

  • Puree mango.
  • In a small, airtight container, mix together mango and 1/4 cup sugar.
  • In the refrigerator, chill mango puree for at least 1 hour (chilling 12-24 hours will enhance your ice cream’s flavor)

Ice Cream Base

  • Beat eggs until they are light and fluffy (1-2 min).
  • Slowly add sugar to the eggs and beat for 1 more minute.
  • In a saucepan, heat milk until it just begins to boil.
  • Pour hot milk over beaten eggs, stirring to combine well.
  • Pour mixture back into the saucepan and heat, stirring constantly (don’t let mixture boil).
  • Remove from heat when mixture thickens and begins to stick to your spoon.
  • Chill at least 3 hours until thoroughly cooled.
  • Add mango puree to milk mixture.
  • Stir in cream and vanilla.
  • Pour into ice cream maker.
  • Mix about 25-30 minutes or according to manufacturer’s instructions.
  • Delicious! Enjoy.
