Meanwhile, beat egg yolks with remaining 1/4 cup sugar until the mixture is a pale yellow color.
Heat milk just to boiling in a saucepan and then pour the hot milk over the beaten eggs.
Whisk together.
Pour this back into the saucepan.
Stir milk/egg mixture over medium heat until mixture thickens and begins to stick to the back of your spoon.
Chill completely. This will take at least 3 hours.
Stir chilled cherries and chilled milk mixture together.
Add heavy cream and vanilla extract. Then combine well.
Pour into your ice cream maker.
Churn about 25-30 minutes or according to manufacturer’s instructions.
Helpful Hint: You can also add about 3/4 cup chocolate pieces to the ice cream during the last 5 minutes of mixing. This makes a black cherry chocolate ice cream.
