Ingredients

coconut milk
1/2
cup
sugar
2
egg yolks
lightly beaten
1 1/2
cups
whipping cream
1/2
cup
crushed pineapple
Instructions
Make ice cream without an ice cream maker.
In a saucepan, combine coconut milk and sugar.
Warm over medium heat just until it begins to bubble.
In a bowl, beat the egg yolks.
Pour the heated coconut milk mixture over the beaten egg yolks. Stir well.
Pour mixture back into the saucepan.
While stirring constantly, heat mixture over medium-low heat until it becomes thick (it will start to stick to the back of your spoon).
Place in fridge until completely chilled (about 3 hours or overnight).
Once cooled, add the whipping cream and crushed pineapple.
Pour into ice cream maker and churn about 20-25 minutes or according to manufacturer’s instructions.
