Place bacon strips on a baking sheet and sprinkle approximately 2 tsp of brown sugar evenly over each strip of bacon.
Bake in heated oven for 8 minutes. Flip over and bake an additional 8 minutes.
Bacon should be well-done and crispy – the crispy-ness of the bacon will make for a better texture in the ice cream.
Allow bacon to cool completely (you can cool them on a rack).
Once cool, crumble, chop, or cut bacon into VERY SMALL pieces (about the size of bacon bits). The smaller bacon pieces will produce an ice cream with a better texture and flavor.
Ice Cream Base
In a saucepan, melt butter, then stir in milk and brown sugar.
Stir until well combined. Cool.
Stir in heavy whipping cream and vanilla.
Chill in refrigerator until completely cool – about 2 hours.
Churn in ice cream maker about 25-30 minutes or according to manufacturer’s instructions.
Add bits of candied bacon to churning ice cream during the last 5 minutes of mixing.
