Mix grated lemon peel and lemon juice together. Stir in sugar. Chill in fridge to enhance flavor.
Ice Cream Base
Beat eggs with salt well.
Heat milk in saucepan until it just begins to boil.
Pour hot milk over beaten eggs; mix well.
Pour milk mixture back into saucepan.
Heat. Stir constantly until mixture begins to stick to the back of your spoon and becomes thick. Don’t let it boil!
Chill for at least 2 hours.
Stir in lemon mixture and heavy cream.
Pour into your ice cream maker.
Mix about 25-30 minutes or according to manufacturer’s instructions.
