This thyme ice cream recipe produces a soft ice cream with garden fresh flavor. It's unique, classy, and creamy.
Makes 1 1/2 quarts of ice cream.

Ingredients

milk

large fresh sprigs of thyme
3
egg yolks
⅔
cup
honey
2
cups
heavy whipping cream
Instructions
If you don't have an ice cream maker, click here.
In a saucepan, heat milk and fresh thyme sprigs to boiling.
Remove from heat, cover, and let mixture steep for about 20 minutes.
Pour mixture through a strainer to remove thyme.
Meanwhile, whisk eggs in a separate bowl until light and fluffy.
Re-heat the strained milk/thyme mixture until it begins to bubble.
Pour about 1/2 the mixture over top of the eggs and stir until smooth.
Pour the egg mixture into the saucepan, add honey, and heat over low heat stirring constantly.
Continue to heat until mixture thickens and begins to stick to the back of your spoon.
Remove from heat and let cool.
Chill in fridge until – at least 3 hours.
Pour into your ice cream maker.
Churn about 25-30 minutes or according to manufacturer’s instructions.
