Mix the sugar and salt into the goats milk, stirring until sugar is completely dissolved.
Stir in the evaporated goat milk and vanilla extract, mixing thoroughly.
Pour this mixture into your ice cream maker.
Freeze according to your ice cream maker’s directions.
Add crushed pineapple and maraschino cherries during the last 5 minutes of churning.
Helpful Hint: For a nice pink color and more flavor, substitute the cherry juice for some of the milk – this will make take away some of the smoothness of the ice cream texture, however.
