This Ben and Jerry's copy cat ice cream allows you to enjoy Cherry Garcia made right in your own home.
Makes 1 1/2 quarts of ice cream.

Cherries

halved and pitted (fresh Bing cherries are best, if using canned – be sure to drain syrup)
1 1/2
tbsp
sugar
(optional: only necessary if roasting)
Ice Cream Base
3/4

sugar

milk

cups
whipping cream
1/4
cup
dark chocolate
shaved

Cherries
This step is optional, but recommended. It helps prevent cherries from becoming hard when frozen.
Preheat oven to 450.
In a glass dish, place whole (de-stemmed) cherries.
Toss the cherries in sugar to coat them.
Roast in the oven for 10-15 minutes – stir them occasionally and cook until the cherries are soft – but don’t let the sugar burn.
Remove from oven, cool, remove pits, and slice into quarters.
Chill overnight.
Ice Cream Base
Dissolve sugar in milk With a whisk.
Add heavy whipping cream.
Pour this mixture into your ice cream maker.
Churn in ice cream maker about 20-25 minutes or according to manufacturer’s instructions.
Add shaved dark chocolate and cherries to churning mixture.
Churn for an additional 5 minutes.
Serve and Enjoy!
