Probably my favorite Easter treat is Cadbury Mini Eggs. Give me a big bag and I could probably polish off the whole thing in a couple days. Delicious!

Sooo the thought of combining Mini Eggs in ice cream to produce a delicious ice cream for Easter could not be more appealing to me!

The Mini Eggs look great in this ice cream because of their Easter-y colors.

Serving Tip: Scoop Easter Egg Ice Cream into bowls and then top with 1 or 2 whole Cadbury's Mini Eggs.

With a wire whisk, mix milk and sugar together in a medium bowl until sugar dissolves. This can take 1 to 2 minutes.

Carefully stir in heavy cream and vanilla to combine.

Pour mixture into your ice cream maker.

Mix about 25-30 minutes or according to manufacturer's instructions.

Meanwhile, get your Mini Eggs ready.

For small egg chunks, carefully chop or crush eggs to the size you desire or leave them whole.

Freeze them in freezer while ice cream is churning.

Take ice cream out of ice cream maker and place in container. Stir in egg pieces.

Enjoy and Happy Easter!

Helpful Hint: don't churn the pieces in your ice cream maker because chunks bigger than a chocolate chip may hurt your ice cream maker.
